Pumpkin Bread and Surprise Packages

I probably will not see my grandsons this month, so I decided to send them a surprise package!  It includes several fun items for a two and four year old, and I decided to include a loaf of pumpkin bread.  I formulated this recipe years and years ago and I make it every year…often, because it is a favorite…simple and delicious.  No frills…and, a warning, it does include sugar!I have cooked this bread so much, that I rarely measure the ingredients.  But, basically here is what I do:

3 1/2 cups flour

2 teaspoons of soda

1 1/2 teasoons of salt

1 teaspoon nutmeg

1/2 teaspoon Saigon Cinnamon (for a richer flavor)

1/4 teaspoon of pumpkin pie spice

1 cup vegetable oil (I use a blend with Canola Oil)

4 eggs

2/3 cup water

2 cups canned or roasted pumpkin

2 cups sugar

1 1/2 tsp real vanilla

I mix the dry ingredients together and set aside.  Then I mix the pumpkin, oil, sugar, eggs, water and vanilla. Add the dry.  Divide into two loaf pants and bake at 350 for 1 hour.  See…really simple.It is moist and delicious.  I wrapped one loaf and prepared it with the rest of my surprise package for the boys.If I call the loaf Pumpkin Cake, the boys eat it.  If I call it Pumpkin bread, they are not interested…it is all the marketing, right?  Would anyone else like to share ideas for special packages for grandchildren!  Please do…..then…

  1. All my grandchildren live far away, so sending treat boxes for the different holidays is always fun. Their wonderful parents (my children!) often Facetime when the kids are opening the boxes, so I can see them opening their treasures. To help keep in contact with my oldest granddaughter, I send a special postcard every month. It’s hard to be so far away, but Facetiming and texting sure helps. It makes my day to receive a snapshot of their day.

  2. What a fabulous idea Pam! Such a fun thing for the boys to receive. that bread looks wonderful, thank you for including the recipe, it’s perfect for fall! And if it didn’t have sugar, it wouldn’t be so delicious (just how I look at it!) I think that even though my grandsons are older, they’d like to receive a fun package now and then, so thank you for the inspiration!

  4. This looks really yummy! Thanks for sharing! A healthy tip I use for most quickbreads like this is to substitute applesauce for 1/2 of the oil. Typically it is still very moist and you can’t tell a difference!

    I know they loved their Pumpkin Cake!

  5. I sent my grand daughters a care package occasionally . They were both in college then . I would send them Cookie Butter from Trader Joe’s , maroon nail polish for the Aggies, salted chocolate almonds and a Starbucks gift card.I would include a new blouse from Nordstrom because there wasn’t a store anywhere around their city. And any thing else I saw that I thought would be a treat for them. Girls just need those things, right?

  6. What a wonderful grandma you are! I’m going to try your recipe. I have begun substituting coconut oil for cooking oil, and you wouldn’t believe how moist and tasty baked goods turn out. I use this in my banana muffin recipe and my granddaughter thinks they are the best ever.
