Clean Eating and the Local Co-Op

So many of my friends are practicing clean eating to turn their health around.  Clean eating means fresh is best…local is best…no preservatives is best…and home cooking is by far the best.  Recently, a friend of mine allowed me to have her local co-op shares since she was going to be out of town.  In San Antonio, she gets her weekly share from Koch Ranches Country Store.When they say fresh…they mean fresh!  The lettuce and herbs came with roots still on!  The fun of the weekly shares is that you never know exactly what you are going to get, since you receive the crop which is best for that week.  The bag I received included several veggies I have never tried before and the fun began.  There was a large variety of peppers, which makes my husband very happy so for my first meal I decided to roast vegetables and serve with baked salmon.

I topped the salmon with the fresh onions, garlic, and jalepenos in the bag.  Before the topping, I drizzled it with olive oil, and Mrs. Dash Garlic and Herb seasoning and cracked pepper.I was able to add fresh basil to the veggies from the shares and you can see the fresh clean offerings were very colorful and smelled amazing as they roasted.  I also sprinkled these with olive oil and garlic salt.It was a delicious meal and did motivate me to consider the weekly shares option.  It does take some time to research recipes for the unique offerings in the bag, but if you love cooking and have the time…this can be  a lot of fun.   And I do feel like I am doing something really important for my health when I cook and participate in clean eating.

  1. I’ve been in a CSA for 18 years, year round in MAINE, and I love it! I don’t like the term “clean eating” though. Eating healthy is so much better and has so much less of that diet mentality attached to it.

  2. You know, Shari, now that you mention it..I would agree with you. I like “healthy eating” better as well and that is where I have tried to put my focus. Thanks for mentioning it.

  3. I participated in one several years ago and loved it for the same reasons you do. I tried vegetables that I never had before. I miss it – we just don’t have a convenient pick up place now.
