On the 12 Days of Vacation….My Husband Said to Me….

Let’s grill salmon today….and it
was by far the best meal I have had in a long time!!  Today is the fifth day of my current healthy
lifestyle pursuit.  The walking was a
little easier this morning.  That gives
me hope, since every day so far I have struggled all day with the fatigue
issue.  I am not going to get on the
scales until the end of my time off.  I
do not want anything to discourage me from going forward.  And go forward I must!

These roasted veggies were amazing
and complimented the salmon so well.  I
cut up zucchini, yellow squash, red bell pepper, yellow bell pepper, mushrooms,
onion, fresh garlic, and cherry tomatoes. 
Then I sprinkled them with chia and flaxseeds, Mrs. Dash Garlic and Herb
Seasoning, and poured a half a bottle of Walden Farms Asian Dressing over the
mix.  Stirred well.  Roasted at 375 degrees about an hour.  Voila!
Walden Farms dressings kind of
crack me up….the bottles say: CALORIE FREE. 
Sugar Free. Fat Free. Carbohydrate Free. Gluten Free. Cholesterol
Free.   Now, how is that not water??  Seriously , they taste really good.  A little high in sodium though.

  1. I had forgotten all about Walden Farms…I used their products often when I first did low carb several years ago. Now that I am back on low carb forever – barring vacations and special occasions – I need to locate some of those products again.

    I have been out of the loop for a few weeks…are you on a low carb/sugar free eating plan?

  2. I think it's wise not to expect weight loss from your exercise additions. The benefits of exercise are many, but calorie-wise most hour stints are wiped out with one candy bar or handful of peanuts.

    The pluses are that you get stronger, you get more limber and likely to move around and it pumps oxygen into your brain so you think better. As someone who always seems to be in the kitchen it's a time when I'm not in the kitchen!

  4. Hi Pam! I've just had time to visit a bunch of your posts that I'd missed! I applaud your efforts for health, and I agree that sometimes it's so very hard to be motivated. I hate showing my flabby arms and this comes up every summer! If I just got a little motivated, I could probably make some improvement and be cooler as a result. But instead I complain about the heat, hate getting dressed because I don't feel my best, and generally mope until Fall.

    I bolstered by your 12 days and want to say thank you for sharing your experience!
